Seated at the central table, we had a front-row seat of Head Chef Quentin Royles working his magic.
With 28 years of experience under his belt, Quentin, fondly known as Q, is the driving force behind Bodega. A master of fire and flavour, Q's ethos revolves around nose-to-tail eating, maximising every ingredient's potential. What sets Q apart is his unwavering commitment to sourcing the freshest local produce from Dorset and Hampshire, forging strong bonds with farmers and producers to deliver a dining experience that celebrates the region's bounty. “I visit the farm every week,” Q emphasises. “This allows me to handpick the freshest ingredients that shape our seasonal menu.”
As the evening unfolds, Q treats us to a spread of Bodega's signature dishes. From the succulent Txistorra, infused with the rich flavours of Rioja and heather honey, to pigs cheeks and Chimichurri, every bite is a testament to Q's devotion to excellence. Classic tapas favourites like Patatas Bravas and Padron Peppers add a familiar touch, while the Pan Con Tomate showcases the versatility of simple yet premium ingredients. “We use a lot of tomatoes across our menu,” says Q, “You can get a lot of versatility out of that one ingredient”.

With a network of local suppliers and fellow chefs, Q embodies the spirit of collaboration, continuously seeking inspiration from diverse cultures and culinary trends. “Local businesses can’t live without each other," says Q, “We have to stay connected and inspire one another.” Future collaborations with esteemed brands like The Retreat and Skinny Malinkys underscore Q's commitment to elevating Christchurch's culinary landscape, solidifying its status as the food capital of Dorset.
